Varieties: 49% Premsal, 49% Chardonnay, 2% Moscatell
Prensal Blanc grapes are picked in mid-September. The Chardonnay and Moscatel grapes were picked earlier, in mid-August.
The must is extracted using pneumatic presses, thus limiting the pressure at which the flower must is obtained.
Once the must’s impurities have been removed, fermentation begins with selected yeasts at a controlled temperature, no higher than 17ºC
